The three shows you named fall squarely into the mid-budget category. They cost a lot more to produce than cheap slop, so they're a bigger risk for the production committees. These are the riskiest shows to produce. Slop costs next to nothing and high-budget shows usually have a following to begin with.

In general, most anime isn't supposed to make a return on investment as standalone product; it's considered advertising for the franchise. Remember they actually pay for TV slots to air it, and if they get money back is if it's poplar enough to draw fat cat advertisers. If the overall bump in total sales of various properties within a franchise - LNs, manga, anime combined - does materialize, the owners might just decide to pay up even if anime on its own wasn't an overwhelming success.

Another possibility is that they had an option to pull within a certain time, and did it before waiting for full results.

You can get an idea of the latter case on the example of Reincarnated as a Sword.

They had an option for S2, but the time to call it was before they actually did it - they wanted to wait at least for partial results, so they called mid-season.

The S2 addy was in last ep... but it was too late, and the production team/subcontractor studios were already booked up to their necks and we've been waiting for more cat daughteru and sworddaddy for like forever.

If that I MADE TOILETS WITH ALCHEMY! anime bumped the LN from "nonexistent" to "actually selling a bit" then the franchise owner might just dump money in it.

Note that if the effect persists, it's no good either. Seirei Gensouki had its season run, then option was pulled and they made S2, but the franchise is doing fairly well including foreign licensing, so I won't expect S3 anytime soon because anime didn't stand on its own.

Now, Frieren is another example but to the contrary - anime itself did generally well, so S2 got financed because the publisher felt secure putting money in it regardless if it impacts manga or not.

Several factors, busy studios and rescheduling most likely the culprit as producers will switch things around to give more priority to more popular projects, also some anime get green lighted for S2 but end cancelled midway. So nowadays they try to be careful to not announce things until they start production.

I remember this one. It wasn't too bad. Like most isekai it is designed to be a chicken soup kind of show. Cozy and comfy so that even in its moments of "tension" there is no doubt that the hero will prevail. You don't watch these shows to be challenged too much. It did a pretty good job of this so I guess it isn't surprising it got a S2.
