The setting is literally ruled by devils. The only power to make large scale change comes from becoming one. Griffith wants to save the world and build a paradise, but the only path to achieve it involves incredible evil. So he's willing, heroically, to become a monster if it means saving the world. He has to create a means to destroy himself and the other devils though, obviously, or no matter what his intentions are it'll become corrupted, thus, Casca. It makes Guts into a weapon that will inevitably carve through all the other devils on the way to him. So the world becomes a paradise free of devils in the end, but only because of Griffith willing to take the dark path, all alone, probably with only Guts ever understanding what he's doing at the very last moment.

Void refers to Griffith's dream as the 'back alley path' so the lofty castle in the sky is inseparable from a street orphan's unrealistic fantasies. To even attempt is folly because it goes against all the obvious known rules about the world. Inwardly Griffith knew it was bullshit but he wanted to try anyway even while everyone else got swept up into it and was destroyed along the way. The sacrifice is just the ugly truth of the road traveled no longer shied away from.
