Because he simply didn't feel fulfilled (not even remotely) with being a father guy, having a family, how hot his wife is, children, and all that. It isn't his nature. He doesn't care about any of that. If I remember right he mentioned it's "boring" among other words to describe how much he despises that life-style.
It took him years to realize, but he probably saw it coming from the beginning.
Instead, as far as he's concerned at least, his nature and purpose of his life is being the most powerful warrior of the universe, mainly because of restoring his pure-blooded, Royal Saiyan family (whose by the way got used and killed by Frieza, and Goku was who killed Frieza, taking away from Vegeta the privilege and satisfaction of doing so, which he couldn't have accomplish anyway because Goku was much more powerful, to fuel Vegeta's frustration and anger even more), him being the Prince, and with an extremely strong importance towards honour and pride.

Oh and if you ask me, idk why so many think Bulma and Android 18, unless maybe we're talking about teenager Bulma, in DB when Goku was a kid.

I thought people were bullshitting but it really is true. He never lost a fight to Goku and his entire vendetta and motivation against Goku is ill-founded at best and non-sensical at worst.

Vendetta is kind of a big word. He stuck on Earth to wait for Goku's return and to become a Super Saiyan and assert himself as the strongest after Goku defeated Freeza which he couldn't (perfectly reasonable), lost his drive for fighting after everything went to shit and Goku died, then got his little mid life crisis in the Buu arc.
