Later chapters of the Mazinger volume compilation mix chapters from the Shounen Jump and Tv Magazine runs. Tv Magazine chapters are all one shots that assume you're watching the tv show. Really, if you don't like the Tv Magazine chapters, just skip straight to the Great Mazinger manga, which has the conclusion for the Shounen Jump story (although after that's over it goes back to Tv Magazine for the actual Great Mazinger run, but this one actually introduces everything in the manga itself for the Great Mazinger content).

That's the way the manga has been printed since the 1970s. Go Nagai serialized Mazinger Z in two magazines and while there are some continuity conflicts between them (let's be honest though, Nagai has continuity conflicts even between successive chapters in most of his manga) they are considered to be one series. He added some extra pages and chapters that differ from the original magazine printing but otherwise it's the same but just with a reshuffled chapter order. There are two or three editions out there that preserve the original magazine pages and chapter orders, but the Shounen Jump and TV magazine serializations of Mazinger Z have never been printed without each other.

They resurrect Four 15 episodes later just to kill her again the very next episode, and then that episode's formula gets reused for Rosamia 2, Puru Two, Quess, Stella, Anew, Loni, Marida, and several chicks in AGE.

I don't like it because it's boring and it's uninspired. Lalah's death meant something because of the psychedelic imagery, how she was soulmates with Amuro despite being groomed to love Char, and because she's not truly dead and ends up encouraging Amuro to survive in the final episode. In Zeta they do the Four plotline three (or four if you count Mouar) more goddamn times before they even reach ZZ, the trauma is just to make their loved ones feel like shit and shock the audience, and all the dead women in the season get used as batteries for Kamille's spiritual pressure.
I'm all for Newtype drama, but you need to do something actually interesting with it other than hack writing and/or gender madness. See Gundam X and to a lesser extent Soma in Gundam 00 for ways to pull it off well.

You kinda have to. They overwrite the canon in a bunch of ways similar to Macross:DYRL overwrites SDF in terminology and character design. The rewrites and cut content mostly suck (especially with all the times they overcorrect for the fact that Newtypes come out of nowhere), but at minimum you need to see the changes to episodes 39 to 43 in Encounters In Space.
And make sure to use the 1982 version of the audio instead of the 1998 one.

Zeta Gundam did drag on a bit in terms of misery, but I think I have a lot more charity and patience for melodrama than most people. Four's Kamille's first major non-familial loss, and the tragic misery of wanting understanding between human beings and still having those most capable of achieving this instead die tragically despite their attempts or desires for at least peace of mind, well I think it's unsurprising and extremely fitting that Kamille lost it at the end, I don't think Paptimus needed to give him that strong of a push. Inversely ZZ is such a cheery show to watch after that nightmare.

DYRL was very pretty but as far as I know I don't think either is explicitly canon (and DYRL starts in the middle of the story), and I still prefer the show over the movie, even though I was glad to watch both. I'll probably watch the movies before I die, but nothing I've heard about them was impressive in the slightest. I'll keep in mind the audio bit as well, it sounds like they fucked things up when remastering the audio. There's only an extremely small handful of shows that I think could do with a remaster or a do-over, but I'm generally content to leave most shows as-is.
