I am twenty-one years old and male. I have a pretty demanding special ed educator job. Lately (since about September) I have started to see what sounds like a sharp, abrupt decline in my metabolic rate.
I try to eat healthy, I eat a fairly balanced protein-heavy diet with all the nesseary vitamins, I did tests, I don't lack any micronutrients. I work out on a fairly regular basis, primarily jogging. I sleep pretty well and get a healthy 7-8 hours. I do not smoke/drink/vape/do drugs, outside of a cup of coffee with my lunch.

None of this changed and yet since autumn I have gained a significant amount of weight and constantly felt fatigued and drowsy, nearly every day resulting in involuntary blackout episodes where I wake up with no memory of how I fell asleep, and usually any actions I took whilst doing so (People sometimes say that I spoke to them in a half-asleep state but I remember none of it). This does fall short of narcolepsy in that I do wake up in bed, I just do not recall how I ended up there. I feel like I get no energy from eating and digesting food anymore.

What could be the cause of this?

Idk, but you're extremely neurotic. Maybe you should speak to a psycho analyst if you're able to.

Sudden weight gain could be hypothyroidism. But it could be any number of other things too. You need to see a doctor and get some tests done.

This is either diabetes or a thyroid issue.
