Is there a type of therapist I could talk to about crimes without them contacting the police? Besides Priests.

Most any. As long as it's not an immediate threat you are covered.

You can tell a therapist you did most anything and it's chill, you can't say what you plan on doing.

is this true because I've been doing stuff and while I won't ever plan to atone for them I do plan on stop doing it at some point so some professional help that won't rat me out would be helpful.

yeah as long as its not a threat that harms another person than its all good. you can say you dont plan to stop shop lifting and you wont get reported, but if you say I am going to attack "x" person that gets reported.

Not only won't a doctor tell on you, but the police/courts can't make him. Doctor/patient confidentiality is cemented into law.
