How do I train my temperance and decision making skills under stress?

Today I bumped a car, a passive aggresive asshole looking for a fight went out and for some reason I came out too and tried to reason with the guy. He ended up bullying me over being unable to stop shaking, and he didn't try to reason, I tried to fill awkward silence and ended up giving him 10 bucks to fuck off, he wasn't grateful or defused, I just got taken advantage of. The same thing happened working as a doctor, I resigned because I couldn't remember well the procedures when someone was dying. Same thing happens when talking to women and happened once I was getting interrogated by gangs.

What can I do to recognize my options when I'm dulled by adrenaline? What can I do to not get pulled into the mind game of feeling guilty or responsible? How can I start not giving a shit about people instead of offering unrequested help or solutions?

And specially, how do I safely get into situations I can trigger the shaking paralisis response so I practice on it? Note if I do something obviously dangerous I resign myself to dying, I only get the response if I'm losing something permanent or harm in bad faith is potential but uncertain

Find a hobby where you make decisions under stress and get good at that hobby. There are so many examples that I can't even list them.

Like what? First time I hear about those. It sure as fuck doesn't happen from playing splatoon. It doesn't happen from hiking, at best it feels awkward from walking with an unfriendly guide. Hunting goes against my values. I could try sports but I don't think I could get into the stress state from what's otherwise a friendly game. I tried a kendo club and everyone was too respectful to feel any fighting spirit. I COULD try judo, though I don't want to get injured but I could try it, though it's straight forward fighting, no mental strength skills.

I have no idea what else.

BJJ is pretty good for that. Judo is a little riskier.

About sports, you could try a position the whole team depends on, someone who makes or breaks the game. Like a goalie or pitcher.
