your only options are uk, ireland, malta.
and you can't easily get a work visa/residence permit without a college degree

Can't be done.

EVERY country (including - nay, especially the USA) has immigration laws designed to keep foreigners from stealing jobs for locals. They simply won't let you in

I don't recommend it. A lot of forms require you to select "I am not a US person". The IRS will make your life miserable even if you're on another continent.

By all means try your luck if you get a job first. But don't come here looking for a job.
