It's an argument tactic. Often women (and even some effeminate men) will say things like this to get you to back down on your point. To be clear: calling the bluff isn't always the best answer to this move, as if you say "maybe you're not" then that could just escalate the argument to a breakup.

Best answer is to say she's being ridiculous (as politely as possible) for saying that and pull the conversation back on topic "I want this relationship to work so you need to stop acting so paranoid and trust me" stuff like that.
