Quit weed 2 months ago and I still feel emotionally dis-regulated
Trying not to drink every night and abuse caffeine in the day and binge eat
How do I cope at work where its loud, hot, and far from home

Weed didn't cause this(I'm not saying you should smoke...). You have a defective frontal lobe.
You managed to keep a job, so probably there's some hope.

Weed helped a lot for me to be less defiant and angry
Pretty sure it helped me need less dopamine throughout the day just by smoking a bit at night
Can't go back to smoking it, I'm in no position to reduce my career prospects at this stage of life

Have a long-term plan. You sound like someone who lives by instant gratification and short-term goals ("next paycheck"). In the context of such a plan, the onerous current conditions would be self-captioned as something that you do to follow the plan, and no need for "copes."

I have several, I'm motived a lot more by tangible stuff like math and music over training and certifications. I know it's a huge disadvantage I do plan on taking your advice and focusing my efforts into real world niches

heavy weed use can dull dopamine response, you probably have recked your dopamine system especially if you binge eat and binge drink. The road to recovery is long 6-12 months and you will be better than you ever were.
