I was having lunch with my mom and we were talking about various topics, books and movies, but also more personal stuff like my job, education, life, emotions. I noticed the waitress was a bit curt with us for some reason, I found the waitress slightly attractive despite being a bit older and I tried to smile at her as she was serving us but she continued to treat me coldly.
After a while I felt really anxious and just wanted to leave and my mom seemed a bit offended that I got anxious out of no where. We don't go out to eat just the two of us so much any more and it makes me kind of sad

If you weren't being creepy, it was probably just her disposition. She probably was like that to other customers.

She probably just wanted to eat at the place she dedicated time to eat at and doesn't like being around you when you are spazzing out.

Social situations are a common source of anxiety. Controlled breathing can help when you are feeling that way. Also, just realize that half of your social interactions are solely out of your control and aren't a reflection of you. More social experience helps prevent anxiety, but not having expectations eliminates this anxiety entirely.
Expectations from people that care about you can be exhausting as well, and it sounds like your mom was talking about what she thinks about you. Understand that anxiety from this is pretty normal.
