in france one way to do it is to first get a biology or geology degree then you get a master's degree in biodiversity and evolution and from there you can get a doctorate in paleontology
it usually depends on the country

Geology pros: you know how and where they tend to fossilize and the changes of the world in a more broad sense
Cons: you know shiy about living beings

Biology pros: you know how the species and evolution works on a deeper level (something crucial for paleontology)
Cons: you know shit about geology
