Guinea pigs. They can't climb so they're easy to contain; they're happy to eat veggie scraps, hay, and pellets; you can make cages out of old fleece and towels; and they're super fun little happy potatoes.

For outdoor pets geese. Extremely loyal and very hardy.
For indoor-outdoor pigeons/doves. Just very funny and loving birds.
For indoor exclusively finches/sparrows they have a lot of personality for birds that aren't very smart and their antics are entertaining can keep a flock of them in a relatively small space as long as they have room to fly and time outside the cage to do it.

I like tortoises but they require a specific climate.
I like bunnies but they require constant supervision.
Ferrets sleep so much and they're independent naturally so they're probably good as domesticated pets for someone who works. Since they'll be asleep in the normal workday but awake in the morning and evening when you're home.
