Quercus alba is still my favorite. They're the biggest, oldest, gnarliest oaks where I live. They used to be planted as shade trees for sheep farms but sheep farming stopped being profitable so forests just grew up around them. So you'll sometimes find these enormous monsters hiding in dense woods and they look magical. I used to hang out in them all the time as a little kid.

How well do they respond to pruning? I want to plant some for wildlife, but don't want them to get big enough to require an arborist to maintain them.
