My mother always overcooks the meat and it comes out hard and rubbery, but I eat it anyway because if I don't it'll just go to waste, and she'll take it personally on top of that. I really want to just tell her to either git gud at cooking or just fucking stop, because you're ruining the meal, but she's too emotionally fragile to hear the truth and will act unpredictably if she hears it. I hate my mom, and it's bittersweet cause I don't want to hate her, but she's fucking retarded.

It's ok. I had a similar experience growing up. Everything was unseasoned (salt and pepper shakers on the table, that's it), overcooked, and poorly composed. When I turned 18, I moved out, and started cooking good food. Once you turn 18 and finish high school you can rent a house with a couple buddies and eat good food.

Dubs. If you could prepare a meal yourself in her presence, and then share it without it being obvious what you're doing, then you may teach her how to cook more effectively. After all when she sees and tastes what you are able to create she'll probably take a natural turn to emulate your better methods and outcome.

Maybe you can learn how to properly cook meat and you can teach her how. It will take many attempts, my mother is retarded too but I've taught her a few things about cooking meat.
