In my experience, ashekenazi are super similar to non-jewish whites; if you control for urban vs rural, education level, and socioeconomic status. So if you're measuring jewishness, you're probably measuring the wrong thing here. I have much more limited experience with Mizrahi, but they did remind me of Arabs, in that they were very quick to befriend you, and have very short tempers.
