In my experience, ashekenazi are super similar to non-jewish whites; if you control for urban vs rural, education level, and socioeconomic status. So if you're measuring jewishness, you're probably measuring the wrong thing here. I have much more limited experience with Mizrahi, but they did remind me of Arabs, in that they were very quick to befriend you, and have very short tempers. Sephardic Jews seem identical to the white-hispanic ruling class of Latin America.

one area where I envy jews is that they tend to always be financially supportive of their children. Non-jews are as well, but less reliably so. Like, most of my friend's parents didn't start charging them rent on their 18th birthday, but the ones who did were all non-jews.
