Land lord installed new shower knob but doesn’t know what the fuck he’s doing, shouldn’t the back part and hose be in the wall? Can I even do anything to fix it since I’m renting and don’t own?

no you can't do anything unless you are 100% certain you'll do every right. if you fuck it, you'll get on trouble with the landlord. it'll probably be a violation of your lease and you could be kicked out, sued, or simply not allowed to renew when it ends.
