It's mainly because of endogamy and inbreeding. Even though Jews all throughout the world eventually intermingled with the natives of the countries where they ended up, they usually kept to their own. For Christians it was also looked down upon to marry a Jew. So it didn't happen as often as you'd think. A couple like that would more often than not be chastised by both their communities, so it simply didn't happen a lot. Because the Jewish communities were often small, they often married their cousins and second cousins. Though let's just say for the sake of the argument that they only have a little amount of blood or maybe you'll find a group of Jews that is solely descendant from converts (however unlikely that might be)... are adopted children not eligible for inheritance? If they converted, that must mean that they have been accepted by the Jews as one of their own (which is no easy feature). If you do a DNA test and suddenly find out you are actually adopted, will you suddenly lose out on your parents' claim? If you're a Turk from Izmir and find out your genes are actually 75% Greek, does that mean you should move to Athens? I think it matters much more that they've inherited and upheld the culture for 2000 years in diaspora, rather than getting lost on whether they're 10%, 25%, 50% or 100% genetically semitic.
