Before the butcher/retail get the meat, it's been frozen to kill parasites because don't eat raw fresh kill meat, you'll end up with a brain worm dummy.

I mostly only enjoy heart raw but I still rather it made into jerky. Most other stuff sticks into my teeth pretty bad and I just don't enjoy that. Some of those membranes can be hard to notice.
