As a logo designer, CNC operator, and printer, I can tell you that the old logo has two major issues that drive up costs and cause problems.

First is its size, the ratio means it can end up dominating the available real estate compared to other logos if they are shown together (for example, on a mall's map or in an advertisement). Second is the amount of detail in it, the man and the barrel have a lot of detail that will get lost in print if it's not large enough, and businesses get really pissy if their logo is not printed in sufficient detail and there is no reasoning with them because they don't understand the limits of printing, especially on a large scale. The simplified logo takes up less space and allows for less-demanding (and less expensive) hardware to fulfill the task of printing it.

In addition, the logo does not lend well to the square format common to mobile appy-app-app icons, and the cracker and the barrel will just be a barely-visible blob if used on its own.

In other words they want to save a few pennies because number must go up.

The issue I have with this argument is they've been using the more detailed and harder to print logo for 50 years. Over this time printing technology has only improved, so if it was not a problem 50 years ago, why would it be now? If they've lasted this long with it then they should be able to continue.

Exactly, it's not a problem in the technical sense and they can afford it, but the number must go up. If they print it a million times and find a guy who can print this logo for a penny cheaper, that's an extra $10000 saved.

Most printing equipment is chink pieces of shit that have the most user-hostile software imaginable, they gum up all the time, and any ink that isn't regularly used will turn into a semisolid sludge that needs cleaned out and replaced. Colonel Sanders' face has been the focus of the logo for long enough that people will recognize him, same with the Quaker Oats guy. If you were to show Herschel's face in isolation without the iconic orange and brown colors it would not be as easily recognizable as the Cracker Barrel logo. Even if you retained the colors nobody is going to look that closely at the details of a corporate logo.
