If it's actually cheese (as in, it was made with a starter culture and not slop poured into a mold) then yes it's totally fine. I'm making a block of brick cheese that has to sit out at 21 degrees for over two weeks before going into the fridge. Brie and camembert would be even longer. The point is that the "good" culture that is healthy fights off and creates an environment where bacteria can't grow anyway. So the worst thing that can happen is if you left it out for a week and it started getting black/red mold. But even then it wouldn't kill you.

I've had a selection of Wisconsin cheese and while I have been positively surprised I do not think it can be considered the best by any metric (the ridiculous "world cheese awards" do not count). I'd buy some if it was more readily available abroad.

In my opinion, the main issue is that FDA policies on the use of raw milk are too strict which severely limit the potential of American cheese.

I'm not exaggerating with my suggestion that there are probably 1000 brands of American Parmesan which range from Parmesan reminiscent sawdust to world class and made with traditional methods.
I don't have a list on hand but it's not like they're secret I'm sure you can find a dozen types in a broad range just by googling.

In the town I grew up in the supermarket even carried small amounts of locally made Parmesan which I always bought for when I was making shrimp scampi.
