those types of camera are expensive stuff. they cost $$$ or $$$$. yes they have HDMI out. no, they can't send video feeds over USB. that's what the HDMI capture dongle is for. it can either go into a desktop computer as a plug in card, or it can be one of those USB dongle types.
the combination is visually superior to any and every "webcam".
there are digital video filters that render fake bokeh on the background in your video. you can just run such a filter on your computer. it uses AI to figure out which areas of the image are close and which are further away.
these things can't beat actual photographic bokeh. they can come close.

it's funny i was just reading an article about implementing a hexagonal bokeh shader
sort of unrelated but i started using depth anything v2 to generate height maps for parallax mapping purposes and it works pretty well
