ground meats are much more dangerous because of the greater surface area, and how it's all mixed together
most meat is generally "safe" to eat once you sear the outside, but it isn't so for ground meat

i once tried to make meatballs, but i didn't realize you're supposed to bake them after searing/frying
i only seared the outside & then ate them
