i remember this italian restaurant from when i was young, they handed out a dish of olive oil & vinegar with spices
you could dip the bread in there and it was great

olive oil and oregano on toasted bread
diced tomatoes, olives and onions mixed with tuna
literally any cheese goes I think, they all keep the sandwich interesting, I recommend rindless goat cheese it is really tasty
