You just have to cast a wide net. Apartment complexes won't rent to you, you'll have way better luck looking for a private landlord (ie someone who's looking to rent out their house/condo)
Most will still require proof of income but some will be open to your situation. Offer to show them bank account balance, also as

It's just a numbers game, be prepared for a lot of rejection, use any personal connections you can, and eventually you'll find someone. If you're in a blue state with strong tenant protections it'll be a lot harder because evictions are difficult, so landlords have higher screening criteria.
