Around a week ago, I shared that my gf had found out my btc by accident (I left my wallet open on my browser and the balance wasn't hidden), and that I was afraid it might make her change her attitude towards me.
Yesterday, we both found out her dad is developing some kind of weird illness that basically makes him super tired (something related to blood pressure), to the point where he had to stop going to work. My gf hasn't asked me for any amount of money, and matter of fact she's dealing with the bills of the treatment on her own.
What should I do here? I definitely do not want to sell any of my coins (It took me a long time to build up my portfolio, plus most of my poorfolio is just staked btc), but I don't want to seem like a douche who won't lend a hand when needed. I can help with a couple hundred (which is nothing), but any more than that is just too much.

Talk to her about it. Ask if there's anything you could do to help, listen to her (!!), and then if the conversation gets to your finances you can be transparent about what you can and cannot do. It could be something you bring up when you two are together, a "how's your father?" thing.

Obviously each person is different and you know your gf better than I do. But women genereally like being listened to when they're stressed, and don't like it when men come off as stingy or overly rational (as in "I can give you X and that's about it, I'm saving the rest for something else"). Autistically explaining how you have staked bitcoin that brings you gains and selling them would be a massive loss in the long term that would cripple your ability to make more and perhaps even be able to help her more effectively in the future when she's in an emotional state is a terrible idea.

The best thing to do is to just tell her you have [insert amount you're willing to give] and that the rest is staked money you won't have access to any soon.

I sympathise with your situation and I hope the old man gets well soon. Whether you part ways in the future or this relationship lasts (hopefully the latter), this money will be important for you and it isn't a good idea to burn it away especially when your girlfriend is able to support him even if with some effort. My gf's pops has been feeling better in the last couple of days, seems like all he had to do was starting to eat more healthy and go for long walks. He's obviously not cured yet, but it seems like he's on the right path now.
