/ck/ I have never posted here but blah blah blah I'm trying to save time, money, washing up and motive power due to some health and life problems...I'm currently trying to author a document of recipes, probably about six different things I can batch cook and freeze for the month.

>will cook a few times a fortnight for two plus freezing an additional two person portion x 3
>that's twelve meals for two or six out of the fourteen days
>one day a week we just have a soup and toast or ham salad sandwich or something light

What are your top 3 freezer meals? Bonus if they are for winter and contain a lot of vegetables.

Picrel is what I'm making tonight for a couple nights. I add roast zucchini, onion and a lot of cheese.

I usually make vegetable and bean heavy stews/chilis which I can serve over fresh rice/pasta/mashed potatoes.

this is best. i have been making a month worth of mirepoix for the freezer then using them to make weekly batches of soup in my slow cooker. makes the weekly cooking easy and you can vary the soup each time

Not frozen but I'm getting into bone stock. Cook a shitload, use what you want with some noodles and a bit of green onion, put that shit in the fridge for later. If you cooked it long enough it'll solidify and you can scoop out what you want throughout the week, then when it runs low reheat the pot and add more water. You can keep that shit going for a couple weeks.

i like making breakfast sandwiches and wrapping them in tinfoil and freezing them. toss them in the air fryer or oven until their warmed through.
same with breakfast burritos.

chicken tinga is great and if your lazy this can also be a burrito filling

don't do pasta. that should be an occasional treat not something you'd be eating days on end. beans are ideal but rice is the lesser of two evils if you must have something else.

perhaps slightly off topic, but in aldi macaroni with ham and cheese and lasagna are so cheap it's simply not worth it to make it yourself. just buy a bunch of it and dump it in the freezer. canned ravioli is even cheaper and lasts forever. we're talking €3-4/kg here for premade meals, and this is western europe. canned fish with bread and olive oil also requires zero time and effort and is easy to stock up with

I like to cook/freeze things that are versatile, ie, can be used for different meals, for example, bolognese sauce can be served with pasta, fries, or boiled potatoes. Mince meat, carrots, peas, onions, and gravy cooked together can be served the same way.

I filled my freezer before the birth of my child and it was quite helpful. I suggest using disposable freezer pans for all casseroles. I also froze soups/sauces in vacuum sealed cubes so I could reheat them in the sous vide, which saved time and sanity.

For the Tex-Mex casseroles and the chili, you can use extra beans for all or some of the beef. For the shepherd's pie, you can use cooked brown or green lentils for all or some of the beef.
For Tex-Mex sides I used boxed Spanish rice mix and canned refried beans. I served with avocado and salsa.
