the bites are smeared with soy sauce which is ugly. You can consider using a brush to smear small layer on the fish pieces, but not on roll piece

Depends, but usually you gotta catch a fish first! Sometimes people let the fish dry out some and then carve it up into bits to put onto rices. You can also take a chunk o fish then wrap it in seaweed overnight. Then you chop it into flat rectangular slices and SLAP that shiet onna rice ball.

This takes many years to learn. I would suggest getting started sooner rather than later.

How did you rehydrate it and what was your water to kombu ratio? There are 3 different types of kombu that are a little different. Maybe you got one of the more delicate types. Post a pic if you have one.

It should just sorta taste like an ocean kelpy kinda taste. Once you add the dried shiitake or katsuobushi the flavor of the dashi become much stronger and much more delicious.

You need to mix it with either shiitake mushrooms or dried fish to bring out the "true" flavor. Msg on its own tastes like nothing much, but once you mix inosinate/guanylate(katusobushi or dried shiitake) with it you get a super meaty and tasty broth. Dare I say it becomes... umami.

There are some fun recipes where you simmer strips of used kombu in a soy saucey type liquid and then use it as a garnish. It's pretty yummy. I forget what its called tho.
