The biggest reason I don't order sausage and cheese is most places kinda fuck up the ratio. The sausage on that slice you posted is pretty decent. Plenty of meat, the sausage isn't too big, good amount of cheese and sauce.

I think the last time I went with a sausage and cheese the sausage was like golfball sized and maybe 2 sausage balls per slice. The meth head making the pizza barely understands I'd like to taste sausage with at least every other bite, not 1 meat ball at a time.

I still like it, but thats why I try out different local places because sometimes it just sucks and the only way to find out is to fuck around. I just know of one place near me that does a good sausage for pizza and I like it. But I never get just sausage on its own anymore, so usually its a combo of some sort.

I make a lot of it but I put half-cooked sliced sausage in my sauce to give it fat and chunks. I'd say that homemade pizza wise, it's more work because you have to cook them then cut them in slices. With peperoni you buy it pre-cooked pre-sliced. Even with ground beef, it's also a lot easier and simpler too.

The sausage is always weird and not good. I know there is some good stuff out there but that is not what I am getting.

A lot of cheaper places skimp on Italian sausage and just get frozen, precooked crap.

Personally I think it needs to be paired with something. Sausage on its own isn't too appealing but sausage with onion, peppers, mushrooms, or some combination of the three is divine.
