I tried an enchilada and they suck compared to everything else I've tried so I stopped experimenting. If I go to a Mexican restaurant I'm getting tacos or nachos 100% of the time. If I make Mexican for myself I might make fajitas too.

Folding a quesadilla isn't a fundamental modification. You can unfold it just as easily. Nothing about it changes. It's not like ground beef vs hamburger where once cooked the ground beef is now fundamentally different as it will never be able to obtain the contiguous form of a burger again. Tacos, burritos, quesodillas, etc have not fundamental difference. It's literally the same thing and can move between those forms effortlessly and reversibly. In that we see that the changes are neither drastic now fundamental.

Only if they are crunchy, I prefer the "street taco". Small tortilla with meat, fresh onion, cilantro and crumbled cheese and throw a bit of hot sauce on there.
Crunchy is good too but I dont think thats a Mexican thing, I could be wrong but I think thats like the Americanized taco. Kinda like texmex maybe. I still do enjoy myself a white people taco night.

Most people are not you, OP. I'd also hazard a bet that your picture isn't Mexican, either. It looks like a typical dish from another country, even something vegan.

I had a charmed childhood, and spent every third weekend in Mexico City, shopping and dining, mostly, with my family. Dad worked for an airline. I still travel nearly every single month. Self-care is satisfying my food cravings, whether creations at home or dining out. It's the united nations in my kitchen but Mexico will always have a place. I like most of the regional dishes, but a homemade soup hits all the notes for me: herbs, drizzle of crema, tang of lime, heat and sweetness of chiles, crunch of a topping, all of it at once.

I tried one of those birria things that someone ordered for me at a restaurant a while back. It was fucking disgusting. There was a thick layer of grease on the top and the meat was unidentifiable, both in terms of flavor and texture. The only thing that made it palatable was the fact that it came with some tortillas that took the edge off the grease
