why is the absorption method the default method? i follow the directions and it still fucks up sometimes. i do the boiling/strain/steam method and it comes out perfect every time. it seems like the superior method.

Are you following the instructions on the rice packaging? Because those are wrong.

yeah. boil it until tender, strain it, throw it back in the pot and put it lid on it. let sit for 5 minutes then fluff with a fork.

Like I said, the instructions are faulty.
When cooking rice you require the same volume of water as rice and and roughly an additional cup of water to account for evaporation.
The 2 cups of water for 1 cup of rice tends to be fine but 4 cups of water for 2 cups of rice is way too much.
This gets further influenced by the proportions of your cooking vessel.
It's why the classic advice is to fill it with water upt to your first finger knuckle over the rice.

I fucked rice up with the 2:1 method. It entirely depends on the type of rice. Sometimes 2:1 is perfect. Sometime 1.5:1

like 99% of people making bulk rice will fuck it up. You think that those uzbekis making plov are actually getting "perfect" rice every time they use their giant pots? No dude, they don't care. They're just trying to feed like 30 people. Just eat the imperfect rice or get a Japanese/korean rice cooker which will get it right every time. Getting it perfect on a stovetop is so finicky, you have to take into account
>surface area
>altitude
>stove temp
>grain size
>washed or not

You can eventually hone in on the perfect cook but you'll end up cooking rice as long as those poor apprentices in Jiro Dreams of Sushi before you get it "perfect". A zojirushi fuzzy logic costs like 50 bucks, just get one.

i use a medium sized pot on the smallest burner i got on the lowest setting. turns out perfect. i can even get the timing right to make it as firm or soft as i want. Before i worked out to turn the heat to minimal I would fuck it up every tiem.

>Drain water from bowl
>Measure out twice as much water as rice
>Put it in a pot and set it to boil
>Dump the rice in (don't pile it in the center like a retard)
>Set it to low
>Set the timer for 22 minutes
>Cover
>Wait 22 minutes
>Rice is done
>Scoop out of pot and eat

wash rice til water runs clear
add cooking water
bring to a boil, put lid on
turn stove to lowest possible setting
come back 15 minutes later

Are you lifting the lid multiple times? Are you leaving it to rest 10 after the 20mins cook time? More variables....

And it mostly depends on your pot thickness, stovetop type, and tightness of your lid. Know your equipment and it will work right 100% of time once you figure out your own formula. Upgrade or test your items.

I just use a rice cooker. The thing is cheap and reliable and easy to clean/store.
I'm always losing the cut that comes with them, but you can replace it with any 3/4 cup.
