does anyone on this board have experience cooking spaghetti alla puttanesca? i'm planning on cooking it for the first time and i need a decent recipe. if you don't have one on hand, telling me where to find quality, authentic italian recipes works too

sweat sliced garlic, anchovies, and red onions in a good amount of olive oil till the anchovies dissolve and garlic is slightly browned, as well as a small pinch oregano and chili flake, add in your tomato(either sauce or crushed canned plum tomatoes, depending on texture preference), reduce it slightly, add kalamata olives and capers plus pasta water, add spaghetti when its slightly undercooked, finish cooking in sauce, toss or stir well till the sauce thickens slightly
plate it, finish with breadcrumbs and chopped parsley, wa la
you can also add sundried tomatoes for some more tomato flavor or a can of good tuna if you want more protein/fish forward
its a very easy dish, hard to fuck up tbqh

you can start the sauce as soon as the pasta goes in your pot of water, really doesnt take long at all
the way i would make it/how i teach my cooks to do it is to just go with a hot pan, and cook the aromatics+anchovies very quickly, but you need to have everything set up and ready so you dont burn the garlic and onions before you can get your sauce in, takes about 2 minutes for the sauce to be ready if you're really going for it

Its pretty simple.
Heat up olive oil, then garlic and anchovies go in.
Add chillies once garlic is browny. Mix, then add olives and capers. Mix again, and after a bit, add lemon juice and plum tomatos(or tomato sauce).
Stir, stir, stir, let the sauce build while pasta boils. Then add pasta and toss until its ready.
I like to a bit of fresh pepper and grate some parmesan over the pasta once its been plated.

Would i use the anchovies that you put on pizza? Like the super salty thin brown ones or the ones that are more whole and come in a tin?
