Boil them in large numbers let since of the juice seep out, but the ticket is the onions in sauce that a lot of the carts offer (Sabrett carts, specifically). I have a copycat recipe, which I can post, if you are interested.

Two things that blue my mind:
1. American hotdogs being primarily beef based.
2. American hotdog carts selling boiled rather than grilled hot dogs.

We have "American" hot dog carts here and they have a grill and a flat top to cook hotdogs and burgers on.

This. Most carts even state the brand of hot dogs, from Sabretts to Nathans. They're going to be all beef. The tomato-y sweet onions will be sabrets, which you can buy in the jar at the grocery or some other almost chutney kind of new england style piccalilli like Howards, which is some version of red bell peppers relish. This may have a hint of pickling spice and mustard seeds, tumeric and lots of onions, and well sugar.

I actually like the snap of a traditional sausage, and one that was grilled not steamed/boiled, but a cart is about the toppings. The "dirty water" is simply what happens with protein in the water.

costco and Nathans is probably as good as you'll get for mass produced national brand. anything with a natural casing is the best but cost more (usually) so just buy whatever you have local with a natural casing all beef. the chicken/pork/turkey mystery meat is goyslop hotdogs

Well, I went and got a pack of Nathan's jumbo sized, wonderbread buns, and some skyline chili. Wasn't cheap.
I made the onion sauce, aggregating what I found in online recipes.
I simmered one frank in water, fried the other in margarine in a stainless steel skillet.
Put onion sauce on the simmered dog, put chili on the fried dog.
I wrapped them both in aluminum foil while I took a piss, grabbed a beer, and sat down.

The one with the chili was one of the best hot dogs I've ever had. Amazingly good.
The one with the onion sauce was pretty good too, but I definitely preferred the first.

The $15 groceries cost was worth it.

It's one of the very fibers that keeps tourists from destabilizing the food economy of New York.
It's what keeps Midtown from becoming Barcelona.
It's how Hell's Kitchen can exist so close to Times Square but still have a great restaurant scene that people can go to for drinks and food before or after a show on Broadway.
Tourist-heavy central business districts all exist on a thread between being a workplace, a theme park and a cultural center for locals that includes live performance venues.
If everyone who is visiting thinks "Yah in New Yawk ya gotta getta Hawt Dawg, New Yawkahs live on 'em ah sweah" and then "Well I've always wanted to try that Forrest Gump restaurant" then you can still get into most hip ethnic restaurants and Irish-style Pubs between 5 and 6 before a show and/or after work.
