Good god what do i do with an over abundance of cucumbers? I grew too many, Ive made enough pickles for a year, ive made a bunch of tzatziki sauce, im eating them in salads, what else can i do with them?

Stir fry interestingly enough, hot cucumber is highly underrated.
Also great on sandwiches or in drinks, but those both use very little of it.

GF made and sold home made pickles for $8 a jar. Jars and lids are like $1 a piece, garlic, vinigger and peppers and onions aren't that expensive. Go make some profit you farmin man!

Cucumber lemonade. Juice just enough lemons to cover the blender blades then add whole cucumbers and whole, peeled lemons, blitz smooth, strain through a nutmilk bag or other muslin-like cloth (I like the bag because you can squeeze a lot of juice out) and sweeten to taste.
Curried cucumber. It's this Marathi thing the missus makes. She uses this Indian type of cucumber that's naturally sour but you could probably just add lemon juice to the same end.
She does this other thing with actual cucumber. She fries it with saltfish, vegetables and these yellow chillies she buys and you can eat it hot with rice or roti or cold as a salad or in a bread roll.
Lamb and cucumber soup. I don't know how to make it but it's a common food in China.
Oimuchim. Thinly slice and salt don't cucumber, drain of the leeched water then rinse in a few changes of fresh water to remove the saltiness and squeeze dry in cloth (again, I use a nutmilk bag). Dress with garlic, onion greens, sliced red chili, thin soy sauce and sesame oil. Authentic recipes add sugar and more soy sauce than I do but I use mushroom seasoning powder because it's sweet on its own and adds plenty of sodium. You can add Korean chilli powder or flake if you desire. Toss to combine and allow to sit a while before serving. I like to add cane vinegar to make it sour.
Cream cheese and cucumber sandwiches. Really good with hot-smoked salmon crumbled into the cheese, as well. In fact, you can cut out the bread altogether halve and scoop the cucumbers, treat them with salt like the oimuchim recipe (but be very careful with them; other than halving and scooping, you want to keep them intact) and stuff them with the salmon cream cheese before slicing into bite size. The treatment prevents them from going waterlogged. You can also slice the cukes thick and pipe some salmon cream cheese on top like a cupcake.
Green gazpacho.
Ribboned cucumber salad.
Rice and cucumber salad with vegetables and lemon vinaigrette (citronette?).

I make a big japanese style cucumber sunomono pretty often
wiz some cukes through the mandolin, salt em, sit em in the sieve so the water comes out, then you make a nice dressing with rice vinegar, sugar and fish sauce
let the cuckes soak overnight
delish with white rice or anything really

Believe it or not you can put in a food dehydrator.
Last year I had too many out of my garden. So I cut them into thin slices and threw them in the food dehydrator to what would happen. They came out like chips. Now I add them to ramen, or just season them and eat them like a chip.
