What type of chowder should I turn this steelhead into? There is spicy fish chowder, salmon chowder, portugese

Manhattan style fish chowder aswell

Ingredients
2 tablespoons olive or avocado oil
1 cup chopped yellow onion
1 cup chopped carrot
1 cup quartered baby new potatoes
1 tablespoon chopped garlic
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
4 cups vegetable stock
โ…“ cup dry white wine
2 tablespoons fresh lemon juice
1 (28-oz.) can no-salt-added crushed tomatoes
16 ounces skinless cod or snapper fillets, cut into 1/2-in. pieces
1/3 cup fresh flat-leaf parsley
Grilled whole-wheat baguette slices, for serving

>Ingredients
> 1 1/2 tablespoons cooking oil
>3 shallots, cut into thin slices
>1 tablespoon chopped fresh ginger
>5 jalapeรฑo peppers, seeds and ribs removed, peppers cut into thin slices
> 1 quart canned low-sodium chicken broth or homemade stock
>2 cups water
>Grated zest of 2 lemons
>Grated zest of 3 limes
>1/2 pound mushrooms, quartered
>5 tablespoons lime juice (from about 3 limes)
>1/4 cup fish sauce
>2 pounds swordfish steaks, skinned, cut into approximately 2-by-1-inch pieces
>2 tomatoes, cut into large dice (optional)
>1/3 cup cilantro leaves (optional)

>Directions
> In a large pot, heat the oil over moderately low heat. Add the shallots, ginger, and jalapeรฑos; cook, stirring occasionally, for 3 minutes. Add the broth and water; bring to a boil. Reduce the heat and simmer for 5 minutes. Stir in the zests and mushrooms; simmer 5 minutes longer.

> Add the lime juice, fish sauce, and swordfish to the soup. Cook until the fish is just done, about 2 minutes. Serve sprinkled with the tomatoes and cilantro, if using.

Sounds pretty delicious actually. I think I've had something similar at a Chinese restaurant before.

Yeah the manhattan seems easy so I'll probably do that. Going to go pick up the ingredients in a bit here.

Alright boys, the eagle has landed. I've just got back from grocery getting the ingredients. We making some Manhattan Chowder. Next time around I'm going to do the hot and sour thai soup; that also sounds tasty. I plan to grill the fish first though which is different than their recipe. I just wanna be safe since it's wild caught.

It's almost done! Smelling absolutely delicious. I'm going to make another bread with all the steps, review, and after thoughts about what I'd do differently next time.
