Why are most people disgusted by raw meat, but then happily order sushi and carpaccio in restaurants?

because they don't buy directly from butchers or own their own meat grinders

Does your grocery store not have a butcher directly behind the meat section?

You trust big grocery store butchers? They’re all druggies and felons.

I dunno, all the grocery store butchers in my area are about as knowledgeable about their meat as the average deli shop owner. That being said, all the grocery stores I go to have a guy working the counter so they have to be competent as opposed to shitty bargain shops that just have pre-packaged meat for sale

Based.
The takeaway here isn't that raw fish is bad, it's that raw meat is good - provided proper sanitation standards are upheld (which to be fair in most countries they are not)

You absolutely can if it isn't stored and prepared properly, just like any other kind of raw meat.

If by "most people" you mean burgers, it's because raw meat there actually is an acute biohazard.
