Chicken breasts I just baked from the freezer with various italianesque toppings. I would not go so far as to call it chicken parmesan. It is wet and sloppy but pretty good given how depressed I am.

It depends, if you're baking them in sauce and juices to make your chicken fricassee style (ala OP) you shouldn't use a rack. I used a rack because I just had chicken and nothing to poach it in
