Did you throw them in the pot immediately out of the packaging? Did you pat them dry, season (read: at min. salt) them, and put them back in the fridge to further dry? Or did you marinate them in a mix with too little oil, or too much amino/juice?

You have to let it dry in a strainer if its chicken that comes in those airtight bags, like cold cuts, and not cellophaned trays, its easy for it to dry that way specially since you cut it in chunks

This, dry brine in the refrigerate uncovered overnight which will lightly dehydrate them then pat dry with paper towel before throwing them into a pan that is way more hot than you think should be as the meat will soak the heat immediately on contact which will drop it back down to wear it should be. Also try having the amount of chicken you attempt to cook at once. Yes it's annoying but it will directly contribute to better browning because small residential stove burners cannot really accommodate more than like 1/4 lbs of cold meat in an even layer to get past the boiling point of water to reach maillard reaction levels at a time.

if you're cooking a big fat breast, yes you will need to moderate the temperature so it doesn't burn on the surface before it's cooked through. that's why if you're gonna pan fry it, you either butterfly it, pound it, or in OP's case cut it into small chunks which will cook quickly and can be seared at a high heat.

imo the best way to cook chicken isn't in a pan at all, it's in the oven. cook it whole, cut it down to the size you want after. you can sear it in a hot pan to get some color and frond if you want, but it'll cook more evenly in the oven.

Salt it and let it dry out a bit first. Slice the chicken randomly so that you can flatten it out. Cook it low and slow. Use fat in the pan and press the chicken against it.
