Not every type of cabbage is good for pickling btw. Some of them wilt and the texture is not good, you gotta buy one of the strong thick ones that retains some crisp and crunch. Also I always do this in winter and I keep em on the balcony so they stay nice cold and crisp, warm fermented cabbage sucks.

Not all pickles are fermented, but some are. Saurkraut is typically traditionally fermented. You add 2% salt to cabbage and then allow it to ferment unrefrigerated. After fermentation you have saurkraut, which is pickled cabbage.

You can also make pickles by adding vinegar to vegetables. Both methods result in a sour and preserved pickle.

I know that this is really complicated stuff, but you just gotta slow down and understand that pickling is a method of preservation and there are different ways to make pickles. You ultra idiot retard.

Doing 5Kg this afternoon. basic, I don't even put spices, better it be versatile especial in bulk.

if it's too salty, it's because you didn't pre-salt it to draw the water out.

And you can rinse the kraut after removing it from the brine, that's more salt gone.

But I often do kraut with craftgerkin, a kind of white pickled cucumber and onion. I never serve kraut by itself that's just how you ferment it.

Have any of you fried this with other veggies? I make sourkraut a lot and it always works, but I never succeeded with anything else. I would like to make red onions or cucumber, but last time they tasted horrible.

I found the same with Gherkins in Eastern Euro Countries, they tend to 'pickle' their gherkins in a brine, whereas here in Bongland and I think Germany, we prefer the use of vinegar.

So I can see what OP means.
