Cream butter and sugar then add an egg or whatever and some cocoa then baking powder and flour and some milk and mix and shit then bake it until it's done then let it cool then cut it in half and put whipped cream in there and jam and fruit then put it back together then make icing with icing sugar and butter and cocoa or whatever then spread it over the cake.
Wala. Simple as.
I bake pie all the time. Just take almost literally any frozen berry or stone fruit, toss with sugar, cornstarch and a pinch of salt and tip out into a pie crust. Lattice top it and bake until done. Also good with a crumble or crumb too. Crumble top is hard and crunchy, made from oats, butter, sugar and molasses. Crumb topping is soft and made with flour, butter and sugar. Both are a complete piece of piss to make.
For apples, I prefer to do tart tatin since I can't ever manage to get my apple pies to not turn out swampy. For that, toss apples with sugar, fry in butter until caramelised and top with the pie pastry then bake, still in the oven-safe pan you fried them in, until the crust is cooked through.
Chipcciole IE Italian-style coiled strudels, are also easy and if you don't live in Italy, likely novel to your coworkers. Take a basic sweet dough like brioche, roll out, top with pastry creme (lemon or vanilla are classic but any will do) and fruit (apple, for example) as well as pine nuts or almonds if you'd like, roll up like a cinnamon roll then coil it into itself to resemble a snail shell. Chiocciola means "snail." Slash it with a good lame to give steam a chance to escape and bake.

Cake and pie, and really anything that isn’t cooked into individual portions, are shit in an office setting. Unless you have a good-focused office, you’ll need to print your own serving utensils (expect them to be misused, and possibly trashed). Offices workers are also completely unfamiliar with the concept of a ‘slice’, they’ll just mangle it to obtain odd-sized chunks.
Go for cookies instead. My latest fascination is meringue cookies, because they’re fuck easy to make by people think they’re really hard. Have also had success with mini cheesecakes (mini muffin pan sized), and shortbread cookies. Anything bite sized that it’s easier to create multiple flavors with works insanely well in an office setting.

Just do a basic strawb shortcake with a yellow or dark choco geniose, if you dont have an isi whipper buy a can of whip or cool whip
Could do individual ones or big one to share. Takes like an hour to prep the sponge and macerate the strawberries
Assemble it before you go to work if its a function if not then bring the finished ingredients and assemble it when you are ready to share

And always rember its not how technical the dessert is that matters its the fact you went out of your way to put the effort in to do something nice for your co workers
