This is the big one. Remember how you used to be able to tell if a store building used to house a mcdonalds or pizza hut? People didn't like that and payed less for those, so planners started using neutral, soulless designs so when the store goes under they can squeeze every cent out of it.
This is also a big reason EVERYTHING is grey, bland and cookie-cutter now, like houses and cars.

Custom buildings also have higher maintenance costs. Dark colors fade faster and absorb more heat, unconventional roof shapes are more likely to leak, you might need to special order replacement parts, or need to rent equipment to reach certain heights that would be accessible with a perfectly simple square box.

Real estate. The entity that owns the land and building leases to the company that operates there, in most cases. Imagine if you owned a piece of land with a big ass donut on it but the donut shop closes down or doesn't resign their lease. Now you've gotta rent out a piece of land with some dumbass donut no one cares about. Way easier to own and rent out a grey flat box instead.

It also won't get the foot traffic it used to. People aren't taking road trips, which is where these kinds of gimmicks became an attraction. Now it would just hurt business since locals are gonna favor something low key and understated
