Can I swap out wine for shaoxing wine or will my dish taste chinese?

I want to make some chicken cacciatore and all I have is shaoxing.

Shaoxing is probably actually a decent substitution, it has a marsala-ish character

Shaoxing will be a poor substitution but it'll be serviceable, it'll just give the food a slight ricey taste.

If it's for de-glazing you can use any blank spirit, of then the Chinese use millet vodka rather than sxiauching. Rather than wine, you want to use a hard alcohol with no flavor.

There is no point adding sciouching as a seasoning, it's not a seasoning, you just get unwanted salt.
