Why did people and cookware companies turn their backs on teflon/non stick pots and pans after it was a fixture for 40+ years? Are people more health conscious or is this just marketing bullshit? Also for the anons that have switched to cast iron or stainless steel, have you noticed any health improvements?

It's called survivorship bias.
People that care about convenience over health or savings don't cook at all anymore and if they do it doesn't require pans.

I switched to cast iron and now my ballsack is more supple and has smoother skin.
Seriously though, I got cast iron so my roommates can't ruin my pans anymore. But they don't even touch them so maybe they are afraid of them, like demons are afraid of pure iron.

Cast iron is just easier to clean IMO because I can just scrub it with steel wool. Teflon is a bitch because I can't use anything harder than a sponge, and it's a bitch to get the really stuck-on stuff off.

Because people have been trained to ignore facts and obey their t.v.
Regardless of the health concerns, Teflon should have been banned straight away due to the environmental damage of producing the crap.

NTA but eat shit you projecting beanpole. I have arthritis and carpal tunnel. I can rep a CoC #3 30 times but my arm is on fire if I have to hold a laden All Clad or cast iron pan more than a few seconds. If it's full of water plus the weight of my other arm scrubbing, I can't even do it. Have to set it down. Weight absolutely matters.

now people have a basic understanding of how to cook and teflon becomes unnecessary for anything besides scrambled eggs

For me the problem is they take forever to heat up. Stainless steel heats up quick and is easier to clean imo than cast iron.

only if the cooking has exposed bare metal. if your pan is factory pre seasoned, or has developed a patina from use you can just wipe it dry and put it away. I usually just turn it upside down and its fine

yeah, I barely ever use my cast iron ever since I got a carbon steel. its like a healthy medium between SS and cast iron. It heats up a lot faster than cast iron but retains heat pretty well because its pretty heavy compared to SS

You usually want stainless for better heat retention. Full-clad nonstick exists, but why bother when the surface is so easily damaged?

SS? Also if you're having trouble heating up a cast iron pan it means you're oven is too "weak" or your cast iron is too thick, I use a thin 6 inch griddle style pan and it heats up within 10-15 minutes to cook, 30 minutes during winter, just throw is on the oven, slather some oil or fat onto it and just wander off and come back to cook on it.

I literally just learned how to cook on cast iron and I love it, I've noticed that people either use a laser temperature thing or time to judge how hot the pan should be before cooking. Once you figure out the properities of the pan and how different they are to non-stick, cooking on it is a breeze and once you've hit 300F on your pan, you can literally cook eggs in 15 minutes, if you're in a rush heat it up to 415F to 420F and the egg will literally cook in 10 minutes and then you can turn off the heat, give the egg 3 minutes each side to allow the oil to caramelize the outside of the egg.
Ugh, so good

>it always sticks to theb ottom for some reason
1) Pan isn't seasoned enough yet
2) You are adding the ingredients when the pan is too cold. If you don't have a way to take the temp of the pan you really shouldn't even bother to try cooking on it until the fat you've put on the pan starts to lightly smoke, as soon as it does you can put the food on it and cook. Always use the lowest heating setting when cooking on cast iron to control heat, if you heat too quickly you'll either start an oil fire or the food will stick due to irregular or bad heat control. If it is still sticking to the pan, then it isn't seasoned enough and you need to season and polymerize the pan, repeat until it no longer sticks.

Cast iron? No it heats up slowly because of how much mass it has.
