probably be fine depending on what you choose. canning is just boiling and you can find plain canned foods without a ton of salt. might get bored because canned things usually lose a bit of flavor compared to freshly cooked though.

fresh beans usually taste a little better but canned is fine. some people prefer canned anyway because otherwise you might have to cook the beans separately since they don't soften properly in anything acidic.

i would just avoid beans that have calcium chloride as a firming agent because they still seem hard sometimes even though they've been fully cooked in the can.

esophageal ulcer maybe but not stomach. comparing vinegar to stomach acid is like comparing a blast furnace to a campfire. youre far more likely to just develop cancer from repeated low grade damage and inflammation.
