I'm tired pretending this variety of mushroom is edible. It isn't.
They literally taste like a soggy sponge soaked in dirt unless you brown them for 100000000000 hours in butter.
Shiitakes are so much better, both texturally and taste-wise.

water acts as a catalyst here. Wet mushrooms break down quicker, releasing more water. By adding some water initially you skip the slow start of the process. It saves time.

If you press a dry salt crystal against a mushroom, it can only interact with the surface of the mushroom to draw out moisture. If you put the salt into a bit of water, the saline solution is absorbed by the mushroom like a sponge (because it basically is one) and osmosis (hence cell breakdown) happens throughout the mushroom. The same thing happens if you let the salt sit on the surface for a while, where it breaks down cells at the surface, water escapes, and that water dissolves some salt and penetrates the mushroom. Brainlet.
