I was a long time blinded by my learned belief that i would achieve great taste and real character to a dish with numerous pairings of spices and herbs. I understand now the way to achieve great flavour is always the proces, how and in what way you process your ingredients.
There is also the fact that if you eat like an american, you will look like an american, and if you eat like an Indian, you will look like an Indian. That, besides the fact that you can achieve better results if you focus on the ingredients themselves, instead of spices and herbs, is another reason why i choose to avoid them almost altogether.
While curcumin can act as an immuno-modulator, your body reacts to them as foreign objects in the body, like a virus or a bacteria. Your immune system reacts and creates antibodies to neutralize them, but that is a stupid thing to have your organism programed to be ready for a spice attack, instead of any other more harmful entities that enter the body.

Well, noah harari likens people who avoid E's in their food to flat earthers, žižek concurs on the topic with saying that what is natural is only a social construct.. if you believe that to be a position of reason, im gladly accepting my behavior to be branded as schizo.
Not being able to find a single salami without artificial preservatives in any of our stores i now have to travel 20 miles to a farmer to get home made dried meats. Why would dried meat need preservatives? I say that is reprehensible perversion!
I have produced tasty chocolate cookies and brownies with chickpea flower, and im in the process of mastering rice bread.
I was really surprised to find out rice bread is not a thing in asia, and even at the introduction of bread to that region, they never figured to make bread from rice flour. Japan only started their campaign for making bread out of rice like 30 years ago..
Eliminating bread, pasta and potatoes, along with sugar from your diet, has a profound effect on how you feel throughout the day and of course on long term health. After experiencing the well being of such a diet, you would never choose to revert back to eating grains.
I still prepare myself a pizza, or bolognese with spaghetti, or any other similar gluttonous meal like once or twice a month, but i find so many dishes like a nice lake trout with sweet potatoes, just as exciting.
Another quest, that will be revolutionary to my diet is making mayonnaise out of olive oil. I used to eat that shit every day in excessive amounts with every meal practically. I have had satisfactory results already, but i still need to refine my method. As daily olive oil consumption extends life expectancy, the result will be a truly medicinal mayonnaise!
