Neapolitan rice and cabbage, especially if it's savoy. The type in the OP is a little too sweet for that, imo, but it's decent enough for salt cabbage, which is not the same as sauerkraut. Shred the cabbage, put it in a plastic produce bag from the supermarket with a lot of non-iodised salt and massage the salt in. Squeeze as much air out as possible and twist shut, tucking the end of the bag under the cabbage. Leave to sit 30 minutes or so the drain and rinse in a few changes of fresh water. Squeeze as dry as possible. That's the end of it.
It's great added to fried rice or stuffed into spring rolls and it stores nicely in the freezer because it loses a lot of it's mass during the process.

Borscht - it uses up quite a bit of cabbage and is an entirely different taste than usual western cuisine. I have been making it quite often lately.

Seconded. I made a big pot of borscht a couple weeks ago, ended up freezing a lot of it for later. I used lamb for the meat. Very tasty.
Whatever meat you use, make sure you buy it on the bone so you can make the broth yourself with that and veggies.

Unironically just make curry cabbage or buttered cabbage and noodles. (Haluski) Probably the best way to blow through a fuckton of cabbage quickly.

I love cabbage. Boiled and served with butter and salt and pepper is fine. With corned beef and potatoes is good. Cabbage soup with peppers and onions and sausage. Sauerkraut is easy to make. Slaw.
Braised with bacon and brown sugar!

for me its yakisoba or any teppanyaki japanese food where you grill cabbage and onion together and mix in some sauce like Worcestershire / ketchup etc.
