I feel that throwing away the meat and vegetables after making stock is wasteful.
Any ideas on what I could possibly do with them?

You can do whatever you want, but all of the nutrients have been leached out of them, and are in the stock now. You'd just be eating a pile of mush with no nutrition.

Just eat it with a sauce or something or the soup. Put it in dumplings. Sear it or something.

If you have a food processor or blender, you can pick out the meat add some broth and blend them into a fine paste.

Add them back to the broth and bring to a boil to pasterize it.

Then you can portion and store the broth. This is how some Japanese ramen broth base is made. When you reheat the broth jsut add the concentrated broth paste to whatever soup you want to make.
