I made it once. Did the pecorino mixed with posta water so it gets saucy and sludgy before you toss the posta in. Wet pecorino tastes like stinky feet. No thanks.

I tried it with pecorino for the first time last night and it turned out like shit.
if you use parmigiano instead though, it's fucking incredible; no idea why so many people (mostly americans) treat those cheeses like they're interchangeable, in my experience they're massively different

there's a bakery chain called COBS Bread that has a "cacio e pepe" focaccia loaf, it bangs.

there's only five COBS locations in the US but they're all over Leafistan - it's an offshoot of a Strayan company called Baker's Delight
