I want to start my own business selling schnitzel and grilled brats outside of bars. I'm in the US

Any suggestions as to what you, the tipsy/drunk patron, would crave?

So far I have thought of:
Fries $4
grilled Bratwurst on bun $5
Schnitzel with lemon $8
Jaeger schnitzel $9
Three grilled sausages and mustard $8

I'm going for a German/Austrian food vibe as that is my favorite food to eat with beer and I love cooking

You might want to pay an employee off the books to be standing somewhere not in your food trucks to do that, though. Preferably near a drain in case some autist calls the cops.

There's no modern fast-casual German in the US
Chipotle with hipster German food would be sooooo popular.
But not just extremely cheap - you have to use non-commodity chicken cuz the ones with smoler breasts and thighs have much better tasting meat, ditto with pork. I'd rather pay $25 for a big high quality schnitzel with fries and all the toppings I want - the key is nice toppings like pickled cabbage and hummus and other sauces.

Not OP, but if I was running a business, I would sell my food combos for approximately 50% of whatever the state minimum wage was. Obviously, not all of my food is going to be Grade A++++ Wagyu, but if I could figure out the optimal ratio of fats, carbs, and proteins at a profitable price point...

Schnitzel is great at a table, where you can cut it. Think of eating while standing food. Brats work, but your schnitzel should probably be schnitzel strips with a lemon sauce to dip. What toppings you have for the bratwurst? $5 is stupid cheap and you'll lose money if you make toppings free, incorporate topping price into brat price. How big are your sausages, pair when with a ketchup curry instead of dumping mustard on everything. You cooking basic German staples, got to jazz it up if you want to be notable.

Your menu is good, anon, honestly I'd drop the schnitzel. Deep fryers are annoying to operate. You could just pop-up a grill with a little tent with the sausages.
Check your local laws, but in most major cities fucking with very small time food pop-up operations is so unpopular that police/city councils don't bother to spend time with enforcing them.

Yes some type of slaw or pickled "salad" would be a nice addition and you could prepare it in advance. You could sell it on its own, serve it under the Schnitzel and the three sausages, and you could offer it as a topping on the brat for a dollar extra. I'm not sure how authentic it is, but you could also offer grilled peppers and onions for an additional fee. If something else that you could prepare in advance, doesn't cost a lot to make, and you really just have to keep it warm all night.

If you're planning on selling outside of bars to avoid the trouble and to offer a much needed additional service maybe it would be better to have some type of hydration or electrolyte drink on hand. Something specifically built to combat hangovers. Also I look for places that don't sell any food so people are coming out drunk and hungry. I bet you could sell those recovery drinks/ shots at a premium and people would be very interested. I know myself stumbling out of the strip club drunk as fuck at 2am would easily pay $8 of my leftover ones for some hangover remedy while waiting for my Uber. Combo that with a basic ass hotdog for $10 and you could make a fortune.

Yea I know but I figure I'd be competing with taco bell/McDonald's/del taco/burger joint fast food for the late night drunks. In addition I'd be competing with food trucks that charge $7 for the cheapest thing and taco stands that charge $3 per taco. I wanted to be a "well that's new, tastes better and homemade, and (relatively) cheaper" option. I suppose depending on where I post up I can raise prices but I myself, for example, would think twice before dropping $10 on a schnitzel from some vendor I've never met. Thoughts?

Personally I think I’d be up for schnitzel served in an oblong roll. I don’t know if your Costco Business has it but mine has a 20 count box of Demi baguettes in the frozen section for $13 if you want to bake them up beforehand.

Also good luck with your business, I think it’s fine to keep prices low at first to gauge interest and get a feel for it.

Best bar food situation I've seen was a taco stand behind a bar that was cash only and tacos were all $1 each. This made the whole process extremely efficient, which when you're drunk and hungry, is essential.
Going to guess it would be difficult to make much of a profit off of one dollar (or Euro) tacos, but avoiding dealing with adding up prices, making change, dealing with technology issues, etc., is a desirable goal.

It's good money but you never cook in the street because you need to move if you want to sell.

Basically you cook things in batches before you go out and just sell them ready to go. The gibsmedat factor is everything, sure people will wait but it's your time that's wasting

A lot of bars will let you hawk as they close because it helps them get all the customers outside.

You've got to get a square payID because these faggot kids don't carry cash any more. And it's not uncommon people will try to steal your food. So remember their faces and give free food to the professional security. Don't give shit to homeless people, if you attract them businesses won't let you hang out.
When you bring it out, you sell it in cardboard boxes if you have to or paper wrap it you can.

And what you sell. Your food costs will be high so don't sell anything with a high food cost. Some nights if the weather is bad you won't sell anything.

So get example, samosa mix only costs 3 dollars a pound to make, you can put a heap in an oven at once, they stay really hot, there's no serious food handling issues.
Hundred Samoa's at a dollar, you're making 85 cents on the dollar. You need those margins because street selling isn't efficient when you factor in travel.

Steamed food scales up, any kind of hot dog, dumpling, steamed bun.

Fried food is great to-order but you're not standing around all day in the street with a wok of hot oil. And when customers come they usually come at once. You can do it if you're out the front of a subway entrance or the spot in an industrial district.
Nothing wrong with a sandwich stall, do a bahn mi, put a sheet of baking paper between the roll and the salad so it doesn't go soggy, keep the meat over charcoal because that keeps flies off it.
I actually price mine by the meat skewer, because a lot of people just want the meat and will eat three skewers in one bun.

You might need a backpack with a chest of drawers, table legs, and then you cook with it as a table then carry the food around as a sandwich board.

Chinese style, shoulder pole noodles, the secret is aerated charcoal briquettes the water weights a ton so you want a gallon kettle to carry it don't try to heat it from cold.

Chestnuts are easy. Roast nuts are easy, that Indian nut mix is easy, shat.

One thing that goes fast is fried batter because you can par fry it then finish it in clean oil. All your Chinese and Japanese fried pastries are done like that.

Something like fried rice, it's heavy but stays hot, so if have a furniture roller you can carry 60kg of fried rice. Nothing wrong with sneaking into somewhere like that to sell lunch packs.

Yes that's my point, the US isn't Europe. Our rules for when/where/how you can sell food are much more strict. Nobody will just let you set up shop on the street corner, especially not in the type of nice area that will have bars full of white people willing to pay for German street food. The bar owners will call the police, the city will call the police, the police will already be on the block looking for anyone to arrest. You will be blocking public throughways, your customers will be creating garbage on the street, and your stall will be an eyesore. Even if you get your permits and the police don't shut you down, the bar/store owners in the area will figure out other ways to fuck with you and drive you out.
The only places you could get away with it are deep in Mexican parts of town (less money, fewer drunk white people to eat your schnitzel) and even then I imagine all the food stall operators have some familial relationship with whatever store they're in front of.

Give these niggas their schnitzel in a kaiser roll with pickles or jalapenos and dill mayo.
I'd also suggest a big box of Krautfleckerl for 4 bucks. Cabbage & noodles are incredibly cheap and if you season the oil with the tiniest bit of flavacol or mix in browned butter solids it'll be incredibly rich and satisfying.
Toast your caraway for it.
Everyone I've served Krautfleckerl to has become a believer.
Ladle on a bit of cooked down tomato sauce (can be anything just fortify it with one tablespoon of browned tomato paste per 500ml) if you want to be extra.

Apparently the most profitable thing is to buy a port-a-potty and charge $1 for everyone that uses it. You'd have to clean it out to make any profit but apparently you're willing to deal with shit all the time anyway. It might take you an hour to clean it out in the morning and on a good night you could make 40 bucks off of it maybe. Put one of those American scooter totes on the back of your van and just link it up and lower it when you get there.

OP here. These are all incredibly valuable suggestions, thank you all. I think I will drastically simplify my menu and add new things as they become profitable. So after all the input I think I'll do:

Fries $4
Bratwurst on roll $5
Bratwurst (sausage only) $3
Currywurst $7
Schnitzelsemmeln (same roll as bratwurst ) $8

Sauces for free:
Yellow mustard
Stone ground mustard
Garlic aioli (mayo + garlic)
Curry ketchup

Things to add and gauge interest in as I expand:

Spatzel
Cucumber salad
Potato salad
Rotkraut/sauerkraut

Goddam I love German food. I'm going to drink some Weihenstephaner now

Austrian here, prefer pork. Also i've read about using a deep fryer here in this thread. Taste-wise i advise against it, it's just not a proper Schnitzel then; but i understand that it's probably more feasible for higher frequency.

Also, the recommend side dish would be a potatoe salade, which can easily be premade/bought in large quantities.

It's not different to shallow frying in a pan which is basically the same as deep frying. Tastewise the choice of fat is much more important and clarified butter should be used.
